Cooking time: 25 minutes
• 2 egg whites
• 35 g melted coconut oil
• ⅓ cup + 1 tbsp almond flour
• ⅓ cup + 1 tbsp erythritol
• 100 g mascarpone of room temperature
• 100 g mozzarella
• 1 tsp baking powder
• 1 tsp vanilla
• 2 tbsp dried cranberries (or other berries to taste)
1.Preheat the oven to 180°C (356°F).
2.Cut mozzarella in small cubes. Put mozzarella and mascarpone in a bowl
and melt in the microwave for 30 seconds. Mix thoroughly until uniformity.
3.Add egg whites, coconut oil, erythritol, almond flour, baking powder, and
vanilla. Stir again until a thick smooth mass. Add cranberries, mix.
4.Lay out the dough into forms for muffins and bake in the oven for 15 min-
utes until cooked.
